Our signature Pork Cutlet that goes well with wine. The Kirishima Sanroku pork used is characterized by its sweet fat and rich flavor. After carefully trimming the meat, we accurately adjust the moisture content of each part. Rice oil is used. It drains well of oil and brings out the natural flavor of the meat. We are also particular about the salted koji that goes with it. Live enzymes react with the proteins in the meat to create the source of deliciousness, so you can enjoy the taste that comes from the ingredients. You can also use the sauce or original truffle butter if you like.
