The soba we offer is 100 percent buckwheat noodles made from 100% high-quality domestic buckwheat flour. Since no tethers are used, they tend to break over time. Therefore, we manufacture our products using a method that is as close as possible to the three methods of "freshly ground," "freshly made," and "freshly boiled." The soup is made with a richly flavored soup stock made from bonito, sardines, mackerel, shiitake mushrooms, and kelp. Enjoy the combination of fragrant soba and exquisite soup.

The most popular menu! ``Tenzaru Soba'' is a hearty dish that comes with 2 freshly fried crispy shrimp and 3 vegetable Tempura. Add Mosaya's original mentaiko salt to make it even more delicious.
