We use mixed raw offal from domestic Japanese black beef carefully selected by the owner. We are particular about ingredients produced in Kyushu, and we carefully select ingredients such as extremely sweet cabbage and fragrant chives. Traditional Hakata Motsu-nabe (Offal hotpot) made by simmering fresh offal and vegetables that can be eaten half-raw in a soy sauce soup that has been a secret from the proprietress since its founding. It is also known as the birthplace of Champon, which is a hotpot seasoning, and the Champon noodles, which contain a soup brimming with umami, are exquisite. In recent years, as a new business format, we also offer offal dishes unique to a restaurant specializing in Motsu-nabe (Offal hotpot).

Our proud offal Motsu-nabe (Offal hotpot) made with fresh offal with excess fat removed and freshly harvested Kyushu vegetables simmered in a secret soup. Of course, you can enjoy it deliciously until the end! This also depends on the restaurant, but at our restaurant we always finish with Champon. The soup is soaked with the flavor of the ingredients, and the thick noodles are entwined with it, giving you the ultimate bliss! Also, if you have the money, you can add tripe when adding the noodles to make it even more delicious. It's worth a meal ◎ Make sure to try it as a side dish for Todome!
