Food Commitment to soup
ShinShin's soup was created with the aim of creating the soup of the "old-fashioned tonkotsu ramen" that has been loved for many years. In addition, we make the soup with great care and effort every day in order to create a soup that is free of odor and taste. Every morning, the ingredients packed into the sundou include mainly domestically produced pork bones, Saga prefecture's branded chicken ``Arittori'' chicken, and flavored vegetables from the local Kyushu region. Then, ground water is poured into the pot, and the lye is carefully removed over and over again until midnight to simmer.

Pork belly is slowly stewed and aged in a secret sauce that is a blend of traditional methods and carefully selected soy sauce. This char siu is carefully packed with umami, taking into account its compatibility with the soup and the flavor that permeates the carefully selected soup.It is a masterpiece with a mildly sweet and round texture that is so soft that it falls apart in your mouth.

The noodles at ``Hakata Junjo Ramen'' are made very thin so that they blend well with the soup. I was very particular about the detail. These unique ultra-thin noodles fall under the even thinner category of Hakata's thin noodles. However, this does not mean that it is not firm or easy to stretch.
