Food Inventing Hakata udon rooted in history in Hakata, the birthplace of udon
When opening a restaurant in Hakata, which is said to be the birthplace of udon, I wanted to create Hakata udon that is rooted in history. Keeping in mind the noodles from the time udon was created, we researched ways to make noodles that revived the image of flour being made by pounding a stone mortar with a pestle. We developed an original noodle by mixing wheat germ and named it "Old Style Germ Noodles." In addition, the soup stock is made from high-quality ingredients from a Kyoto-based bonito flakes company, and the soy sauce is an original product produced by a local Fukuoka soy sauce manufacturer.

During our lunch hours, we offer signature menu items that you'll want to try at least once, such as ``Zubora Udon'' served in a kettle and ``Original Keema Curry.'' In the evening hours, we offer a variety of Local Cuisine unique to Hakata. There are about 100 types! We are proud of our Hakata-inspired dishes, including Hakata black oden, Yakitori (grilled chicken skewers), delicacies, Motsu-nabe (Offal hotpot). In addition, the daily large platter dishes made with pesticide-free vegetables, including ohitashi, Simmered dish, and gratin, are available in a wide range of popular dishes.

Our store is visited not only by locals, but also tourists from outside the prefecture, business travelers, and many people from overseas, and we are particular about the selection of alcoholic beverages we offer. A rare shochu that is only available in Miyazaki and Kagoshima. We have a wide selection of Japanese sake, including local sake from Fukuoka, as well as rare series from Tohoku that are rarely available outside the prefecture. Please relax and enjoy the drinks that go well with Hakata cuisine. Course meals include 2 hours of all-you-can-drink.
