We use "Isumi rice", one of the three major rice offerings in Chiba Prefecture, and we are very particular about not only the ingredients but also the rice! We use natural soy sauce brewed in cedar barrels in Kobitsu, Kururi, Kimitsu City, Chiba's famous water source!
