ChefYoshiaki Matsuura - Pursuing authentic Szechuan Cuisine
Born in Miyagi Prefecture in 1974. After gaining experience at the long-established Szechuan Cuisine "Shibaran," he went independent. In 2010, he opened "Tsuruyama" in Makuhari Hongo, a place he had "no connection to." As the leading Szechuan Cuisine restaurant in the area, it attracts Szechuan Cuisine fans from not only Chiba and Tokyo, but all over the country.

Tsuruyama is very particular about the selection of ingredients, such as purchasing fresh fish from Toyosu and ordering vegetables from reliable producers. The seven-course menu, which starts with a salad with homemade dressing and ends with the famous mapo tofu, uses many seasonal ingredients, and many repeat customers come back each season. The ``Ma Po Tofu,'' which combines the flavors of tofu, pork, and bean sauce, and has a smooth texture, adheres to the authentic Sichuan recipe, which does not use chili oil.
