Hegisoba is a type of soba noodles that originated in the Uonuma region of Niigata Prefecture and is made with a seaweed called fuori. The soba noodles are arranged in bite-sized pieces on a rectangular bamboo steamer called "hegi" using a unique hand gesture. Everyone should enjoy this as a finishing dish.
