At Ebiya, we offer delicious handmade soba based on the principle of ``freshly ground, freshly made, and freshly boiled.'' The soba noodles are made by grinding only the amount of buckwheat noodles for that day and carefully preparing them using the skills of master craftsmen.The noodles are smooth and have a rich flavor that leaves a refreshing aftertaste in your mouth. There are 28 and 100 percent, so it's fun to enjoy the differences between each. Seasonal specials such as ``Sudachi Soba'' in summer and ``Ankake Soba'' in winter are also popular. Homemade soba soup enhances the taste of our signature handmade soba noodles. The base soy sauce is carefully selected and ordered from Shinshu. By adding miso made using traditional methods by a long-established brewery in Kanie, which has been in business for over 150 years, we create a rich and nutritious soba soup. It gives a rich and mellow finish to cold soba noodles. Warm soba noodles have a gentle flavor with a fragrant dashi soup. It goes perfectly with Tempura made with seasonal ingredients.
