At our restaurant, we use eel from Mikawa Isshiki and season it with a secret sauce that we have continued to use since our establishment. We are particular about grilling it over binchotan charcoal without steaming until it is fragrant and fluffy. The ``Hitsumabushi'', which is very popular with tourists, and the classic ``Unajyu'' are other must-try dishes.
