ChefMr. Toshiki Ai (Aitoshiki) - Seeking the essence of Western Cuisine without sparing effort
Born in Shizuoka Prefecture. After working part-time at Family restaurant, he decided to pursue a career in food and beverage. He gained 14 years of experience at Kitchen Masaki, a Western Western Cuisine in Nagoya that was famous for its 100% Western Cuisine beef Hamburg Steak and black abalone Steak (currently closed). Became independent after working at "kitchenNOMU" etc. In March 2019, he opened “Kitchen Toshiki” in Kyoto. In May 2022, restaurant was relocated to the Shineicho Station area and underwent renovations.

Mr. Ai's Western Cuisine is made with great care and effort. When preparing the demi-glace sauce, which is the basis of beef stew, he not only makes fond de veau, which is made by adding roasted beef meat, bones, and aromatic vegetables, but also makes his own brown roux, which is made by frying flour with lard. Therefore, it takes one week to complete the beef stew. In addition, when it comes to other dishes, the restaurant is particular about the use of ingredients, such as using only A5-grade A5 female black beef for the beef, and using farm-designated pork for the beef as well.
