Reducing Food Waste
Since we require reservations, we only purchase ingredients in the minimum lot according to the number of people making reservations. We use the scraps of vegetables, seafood, and meat we purchase to make stock so that we can make the most of the ingredients and eliminate waste.
Using Sustainable Ingredients
All of our coffee is Organic Food and fair trade. You can enjoy ethical coffee that is kind to both the environment and people. We serve Organic Food extra virgin coffee with our homemade bread. For Other ingredients, we value face-to-face relationships with producers as much as possible and use carefully selected ingredients that are produced in an environmentally friendly manner.
