A colorful dish based on classic techniques but with a modern twist. In order to value the flavor of each ingredient and the feeling of satisfaction after the meal, we refrain from using artificial salt, butter, and other dairy products until the end of the course, and value the appeal of the ingredients.

I personally visit Kamamoto and procure the utensils. The appearance of food before eating is also very important. We also use vessels made in Japan to support Japanese craftsmen and traditional crafts.
