Food Coarsely ground soba noodles made with the native soba brown soba, which has a deep flavor.
Of course, the main ingredient is soba, but only local species are used. We search for locally available production areas from Hokkaido to Kyushu, and always offer 3 to 4 types of soba. The purchased buckwheat seeds are carefully ground in a stone mill, and adjusted to the amount that will be used that day. The water used is soft water with a hardness of 0 to 20, and the hardness varies depending on the type of soba, and one of our characteristics is that we use coarsely ground flour.

Our owner, Chojiro Takahashi, fell in love with Gensoba, a native species with a strong aroma and stickiness. He taught himself how to make soba in his 20s and also runs a soba restaurant in the city. He has been researching soba for 40 years. ``I want people to enjoy the deliciousness of local varieties with sake,'' he said, and so he opened a ``small shop where you can enjoy drinking soba'', which was a long-held dream. One of the specialties of this restaurant is that all of the soba noodles are served in a ``soba-kiri'' style so that you can enjoy the original taste of soba.

Tempura is carefully selected and fried from Yanagibashi Market's seasonal ingredients, such as fresh seafood and seasonal vegetables, and uses a homemade blend of flour to maintain its crispy texture. The oil is also adjusted to create a refreshing and light texture. Dishes such as the soft boiled conger eel in Arima and the flavorful and rich grilled miso are also perfect as an accompaniment to sake. We always have about 30 types of sake from all over the country, and while they don't interfere with the food, they can also be enjoyed as a companion to your meal.
