The charcoal that is the lifeblood of grilled chicken is Kishu-produced Bincho charcoal, which emits high temperatures and strong far-infrared rays. Keeping an eye on the changes in the heat, the meat is grilled so that the outside is crispy and fragrant, while the meat juices are trapped inside. We recommend the homemade salt made by the owner! Homemade with a little extra care added to the mellow-flavored salted seaweed. The flavor of the kelp is added firmly, so that you can feel the flavor from the salt itself. We carefully assess the condition, parts, and size of the chicken we purchase, and use our skilled techniques to season it with salt.
