青森駅より青い森鉄道利用で2駅7分足らず。市街地から離れたベッドタウンの東青森駅から徒歩7~8分の場所に周辺の店とは明らかに雰囲気の異なる白い外壁のセンスの良い建物、其の店こそが今回の目的の店 Restaurant『Cassis』さんでした。前夜寄せていただいた『福寿司』さんとは東青森駅を挟んで反対側というロケーション。青森のベッドタウン的位置づけであり駅の寂しさからは想像し難い素敵な店があることに或る意味、青森の底深さを感じ入った次第です。店内に足を踏み入れ予約名を告げますと右手側にある既にテーブルセッティングが済んでいるテーブル席かカウンター席かどちらか好きな方へとのこと。ひとりで四人掛けのテーブル席を使わせていただきゆっくりするのも魅力的でしたが、やはり料理のライブ感と会話のキャッチボールを愉しめるカウンター席の魅力には敵いません。オープンキッチンのカウンター前の席を取らせていただきました。オーナーシェフである『草野晋輔』さんは都内の『ブルーノート東京』さん等で研鑽を積まれた後に30歳の時に渡仏された後に満を持して奥様の故郷である青森で開業。ホスピタリティが素晴らしい奥様と二人三脚で営まれているカジュアルフレンチです。今回は初めての訪問でしたので最も安価な5,000yenのディナーコース料理をお願いしてみました。アペリティフには『Cuvée Françoise Blanquette de Limoux Brut』を料理は『南瓜(カボチャ)のポタージュ』よりスタート、そしてオードブルは多皿構成で前半には『八幡平サーモンのマリネ』に『真鱈のタプナード』に根セロリのガルニが添えられた皿が後半には青森県産 長谷川の自然熟成豚で作られた『パテ・ド・カンパーニュ』にはパイナップルのチャツネにグリーンマスタードのアクセントの皿へと続きました。ポワソンには店名の『Cassis』の由来にも通じるフランス プロヴァンス地方の小さな港町の郷土料理でもある『ブイヤベース』の登場です。ブイヤベースの中身は陸奥湾で水揚げされた『魴鮄(ホウボウ)』、『真曽以(マゾイ)』、『アオリ烏賊(イカ)』、『くもこの(シラコ)』のフリットの海の幸と『Navet(蕪)』と『Chou(甘監)』の山の幸で作られたもの。ルイユは予めブイヤベースのスープの中に溶かされており美味しい一品でした。そしてメインのヴィアンドには赤ペコの異名を持つ青森県産の『あおもり短角牛』のローストです。短角牛の魅力は何と言っても赤身肉の美味しさです。脂の肌理細やかなサシが美味しさの優劣の基準となる黒毛和牛とは対極の赤身肉本来の濃厚な美味しさを味わうことが出来ました。デセールには温かい『りんごのタルト・フィーヌ』 と『マスカルポーネのグラース』でコース料理はひと通りです。青森県産の食材をふんだんに使い供される草野シェフの料理は肩肘張らずに愉しめるカジュアルフレンチ。ポルト酒のグラスを静かに傾けつつ暫し草野夫妻との会話を愉しみ再び東青森駅へ。青森駅行きの最終の青い森鉄道線に揺られてホテルへと戻った12月30日の津軽地食べ歩き。青森市のフレンチと言えばこれまでは自分の選択肢は『Le Pommir』さんと『Evie』さんの二軒でしたが2018年は新たに『Bouquet de France』さんという素晴らしい店に出逢うことが出来、更には年の瀬に當店『Cassis』さんと出逢うことが出来、選択肢の幅がぐっと広がったことは個人的に大きな収穫の年となりました。
