訪問の際、オーナーの米本先生より、
「今日はシェフがお休みで、スーシェフでの対応となります・・」と
報告を受けたんですが、質が高く、旨い料理はやはり健在でした・・(*´ω`*)
シェフが不在でもココまで出来るなんて、料理人の層の厚さを感じさせますネ。
今回は、特にケーキの出来が秀逸だったなぁ~・・(*´ω`*)

秋田シャポン美食会にて
今年の生産数は、わずか50羽だったという去勢比内地鶏の秋田シャポン。
今春からは、秋田の養鶏農家が本格生産に乗り出し、
100羽超の出荷を目指しているのだそう・・
ちなみに秋田シャポンは、通常の比内地鶏よりも断然に肉質が柔らかく、
もも部分に関しては、ナイフを入れた際、甘い肉汁が溢れだすほど。
特筆すべきは内臓系の旨さ・・、特に砂肝に関しては、旨さの極み。
実際食べてみると、通常の比内地鶏とは肉質が全く違うので、
今までの比内地鶏とは、料理の用途が変わってくるんじゃないかと
感じることが出来る。
秋田シャポンは、ローストすることによって、柔らかい肉質と
その旨みが際立ち、通常の比内地鶏は、きりたんぽ鍋などの
煮混む料理よって、真価を発揮する・・そんな感じだろうか。
こちらのお店では、料理によって秋田シャポンと比内地鶏を使い分け、
両方の比内地鶏の長所を活かした旨い料理を提供してくれる。

今年の4月にオープンしたばかりのフレンチレストランです!!
秋田の旬の食材を利用し、秋田の旨いモノを発信するレストランとして、
オープンから日が浅いにも関わらず、
秋田の食通のあいだで、旨い料理を提供してくれるお店だと話題になっています。
今回は、その話題のお店から、秋田比内地鶏のイベントを開催します!!という、
嬉しいお知らせがありましたので、喜び勇んで駆けつけました・・(*´∀`*)
比内地鶏の料理の感想は、写真を見て戴ければ、説明などせずとも、
どんなに旨い料理であったか、また、どんなに素晴らしい会であったか、
この写真の雰囲気から感じ取って頂けるコトでしょう・・(*´∀`*)
ちなみに、秋田比内地鶏をこれほど贅沢に、これほど美味しく調理してくれるお店は、
ワタシの知る限り、ココぐらいしかアリマセン!!
