銀座にある『三笠会館』の本館。フレンチ、イタリアン、中華、和食など高級レストランが軒を連ねる。今回初めて足を踏み入れる機会を得た。お誘いしてくれた方に感謝。
お腹を空かせて定刻より少し前にお店に着く。同行者はまだ来店していないのでウェイティングルームで待つ。
数分後、メンバーがそろったので鉄板が壮観なカウンター席に案内される。広々としたスペースに心が弾む。まずは生ビールで乾杯して宴がスタート。
前菜。三種の小鉢が彩り鮮やか。初夏の季節をまずは目で愉しむ。
旨い! 爽やか!
トウモロコシの冷製ポタージュ。冷たくすると甘味を感じにくくなるものだが、トウモロコシの糖度がとても高いのだろう。しっかり甘みと旨味を感じられる。旨い! 爽やか!
続いて鉄板の出番。まずは富山産白イカを焼き始める。傍らには野菜サラダのプレートが準備される。
焼き上がったイカを適度なサイズにカットしてサラダに載せる。さらにその上にカラスミを削って飾り付け。野菜の青、イカの白、カラスミの柔らかい黄色が鮮やか。
次に、温めた更にバターを入れて溶かす。次の料理の準備を進める。焼くのは北海道産ホタテと初夏の鮮魚。これは焼き過ぎてはいけない。サッと火を通して溶かしバターの皿に移す。バターの風味も加わって、魚介が引き立つ。旨い!
ここでメインの牛肉かと思ったら、旬の野菜が中継ぎに登場。こうやって食べると野菜も豪華に感じる。スゴイね、鉄板焼きの魔力。
さて、いよいよ本日のメインイベント。黒毛和牛ロースと国産牛ヒレがドカンと登場する。生の塊り肉は人類の野生の本能を呼び覚ます。人類は1万年前に農耕生活を始めるまでは数百万年を狩猟採集生活で食糧を得てきた。我々のDNAは肉を欲するようにプログラムされているのだろう。
柔らかいヒレと脂の旨味が強いロースの両方が素晴らしい。いくらでも食べられる。白ご飯と一緒に食べたいところだが、次に出されるガーリックライスを前に注文するのは憚られる。あっという間に高級和牛を完食。
締めはガーリックライス。肉の旨味が染みたライスは絶品。お腹はかなり膨らんでいるがこれもあっという間に完食。
本日のシャーベットでコースを締める。
