新潟・上大川前通の「はつね寿司」さん。
ミシュランガイド新潟2020で一つ星にも輝いた、現在3代目の大将が営む実力派の鮨店です。今回、初の訪問なのでお酒は控えて、鮨とツマミをしっかり堪能しました。

1品目の南蛮海老の昆布締めから絶品。この地点で大将の想いがひしひしと伝わるよう。4時間酒蒸しした鮑は歯切れよく旨み爆裂だし、バイ貝は今まで食べたことの無いほどのゴリゴリ食感と潮の香りが心地よいもの。
ツマミが終わり、握りへと突入。酸味の少し効いた小さめのシャリは固めに炊かれ、コシヒカリ一粒一粒存在感がありつつ、口の中でほろりとほどけるタイプです。
このシャリが新潟地物の魚介を中心としたネタと融合するのです。もう最高の一言に尽きるじゃないですか!ネタへの丁寧な仕事を施し、どれも絶品。佐渡と噴火湾の鮪の食べ比べといった試みも素敵です。
全体的に量は気持ち少なめなのでお酒を飲んでも、最後までコースが楽しめることが分かったので、次回は日本酒も嗜みながらコースを堪能したいと思いました。
