ChefJun Kurogi: The next generation genius leading Japanese Cuisine world
Born in Miyazaki Prefecture in 1978. Raised by parents who ran one of the prefecture's leading traditional Japanese restaurants, he moved to Tokyo at the age of 18 with the goal of becoming a chef himself. After training at renowned restaurants and building up experience and skills, he became the owner and chef of "Kurogi" in Yushima, Tokyo in 2010. In 2017, he moved the restaurant from Yushima to Shiba-Daimon. He is a young genius who is always attracting the attention of gourmets, and is poised to lead the next generation.

To share the food with guests in the best possible way, Kuroki came up with the "Tokyo Kappo" style. For that reason, there is not only a counter on the second floor in front of the kitchen where the banquet takes place, but also a counter in the private room on the third floor. The interaction between ingredients and techniques, the cooking process linked by perfect harmony, and the attentive service - the sense of presence that only a counter kappo restaurant can provide is overwhelming. The elaborate design of the space, with its mesh-white ceiling and ship-bottom ceiling, enhances the depth of flavor of the food.

Now that Japanese-style meal has been designated an intangible cultural heritage, Kurogi once again places great importance on sincerity. When faced with the finest ingredients that can only be found in Tokyo, Kurogi's belief is to "create a menu that does what the ingredients call for," rather than imposing his ego as a chef. The appeal of the ingredients is clearly conveyed in each and every dish presented, such as the beautiful "hassun," the "Simmered dish" that locks in flavor and umami, and the "Yoshino-ni" stewed burdock. The flavor is delicate and beautiful.
Listening to the ingredients and using techniques, ingenuity and ideas to bring out their individuality. "Tokyo Kappo" is rooted in the sophistication of the Edo period.
