Food Fabric/stone kiln. Thoroughly selected [thin-baked Milanese pizza]
The pizza is thin [Milano Pizza] and the dough is made with dry natural yeast derived from wheat. It is handmade with particular attention to the flour so that the wheat flavor is well preserved. After an order is placed, the dough is stretched for low-temperature fermentation and baked in an Italian stone oven at over 400 degrees. It is crispy and fragrant, and the flavor of the ingredients is concentrated, and it is served piping hot! The craftsmen use four types of cheese that have been tried and tested by trial and error so as not to lose the wheat flavor. It looks big, but it is thin so you can eat it all in one go!

Chami pork from Kagoshima prefecture is aged and made into salami and prosciutto. The salami made in-house from raw meat is handmade using authentic Italian methods! This is a dish that requires expert craftsmanship throughout the process, from preparing the meat to stuffing it and aging it. It takes time in a custom-made aging cellar to develop a rich flavor and aroma. The finished salami and prosciutto are cut using a manual slicer imported directly from Italy. Because it's done manually, there's no extra heat being transmitted, and you can enjoy a rich flavor! The salami served on the plate goes perfectly with the wine.
