ChefTakeshi Tanabe - Enjoy a happy time with French cuisine from a famous restaurant
Born in Kanagawa Prefecture in 1969. Having grown up watching his father, a chef, he aspired to become a chef from an early age. He learned the basics of cooking at Hattori Nutrition College and joined Tour d'Argent at the Hotel New Otani, where he studied under Luc Pasquier. After working at La Tourelle in Kagurazaka, he traveled to France and trained at several regional restaurants. After returning to Japan, he worked as a chef at La Tourelle for eight years, and opened Latras in December 2008 with manager Makoto Yoshida.
Food Sophisticated and artistic cuisine based on classical techniques
Guests can enjoy authentic French cuisine cuisine based on traditional techniques with a modern twist, in a perfectly balanced course. Carefully selected seasonal ingredients are adorned with colorful vegetables and sauces that pack the flavor of the ingredients, making them almost works of art. When in season, ducks hunted by Chef Tanabe and Manager Yoshida themselves may also be served. Depending on the part of the dish and the cooking method, the same ingredients can be enjoyed in a single dish, offering a variety of contrasting flavors and textures.
