ChefTakashi Saito - A sushi chef who pursues the beauty of sushi
Born in Chiba Prefecture in 1972. After graduating from high school, he trained at a long-established sushi restaurant in Ginza. He further honed his skills under chef Shinji Kanesaka of the famous Ginza restaurant "Sushi Kanesaka". In 2005, he was entrusted with "Sushi Kanesaka Akasaka Branch", a branch of "Sushi Kanesaka", and became independent. He changed the name of the restaurant to "Sushi Saito" and moved to its current location in 2014.

Saito's nigiri is meticulously calculated, controlling the temperature of the sushi rice while valuing the individuality of the ingredients, such as their texture, flavor, sweetness, and aroma.
