What we pay particular attention to is the aging room, which brings out the flavor of the meat. In order to maintain optimal temperature and humidity, which are most important for aging, the wine is aged for 14 days in a special aging room. We are also particular about the pork we use! We use Iwate-produced Iwanaka pork, which has three times more vitamin E than regular pork, produces pure white, moderately firm fat, and brings out a mellow flavor! Furthermore, the thickness is 3.5cm, which is the golden ratio that traps the meat juices.
