ChefPursuing how to handle and cook vegetables to bring out their original taste
Yuki Matsuda Born in 1981 in Tokyo. While in college, he worked part-time at a Yakiniku (Grilled meat) Izakaya (Japanese-style bar) where he learned the joy of eating and cooking, and decided to become a chef. After that, he worked at [Aen Mizoguchi store] for seven years, honing his skills in cooking. In particular, since many of the menus feature vegetables, we are exploring how to handle and cook ingredients to bring out their original flavors. In 2013, moved to [Aen Shinjuku Isetan Kaikan store]. Until now.
