Reducing Food Waste
Meat scraps and vegetable peelings are used to make the sauce for TACUBO's classic Bolognese pasta, the final dish of the day.
Environmental Protection Initiatives
In addition to cutlery, we provide bamboo chopsticks from Yamachiku, a chopstick manufacturer in Kumamoto. By using disposable chopsticks, we increase bamboo consumption, and by cutting down bamboo, we help protect the mountains.

"TACUBO" is tucked away in a quiet residential area of Ebisu. Upon opening the door, you will find an open kitchen with a counter that seats eight and where you can see the wood fire and smell the fir
...e. Just inside the entrance are two private rooms that seat six. The chef personally visits the producing areas to select the ingredients for his dishes, and places great importance on communicating closely with the producers. The menu is based on the theme of "nature" and incorporates a sense of the season. Wines from around the world, including Italy, are available.
