ChefHead Chef Namazue Manabu
Born in Gifu Prefecture in 1967, Masa entered the world of Chinese cuisine after starting a part-time job in high school. After graduating from high school, he learned traditional Chinese cuisine at famous restaurants such as "Bin'enrou" in Gifu and "Bunrin" in Tokyo, and opened "MASA'SKITCHEN" in Ebisu in 2008. He respects tradition while actively incorporating new techniques and ingredients in pursuit of unique Chinese cuisine. His specialty is colorful and gentle Chinese cuisine that can be enjoyed anytime, regardless of the occasion.

The restaurant's signature dish, the "Assorted Appetizers," is beautifully presented in individual portions and combines Japanese and Western ingredients for a delightful experience. While making full use of traditional techniques, it incorporates the essence of both Japanese and Western cuisine to express the free-spirited world of Chinese cuisine that is not bound by convention. Based on the concept of sophisticated Chinese Cuisine, we bring out the best in the flavors of seasonal ingredients and serve each and every dish with gentle, delicate, and sometimes bold flavors, all with care.
