Born in Kyoto Prefecture in 1948, he decided to pursue a career in cooking at the age of 15. After working at the Miyako Hotel in Kyoto, he spent three years training in England. He then worked in famous restaurants in France, Germany and other countries, and after returning to Japan, he was involved in the opening of the Miyako Hotel in Shirokane. He then deepened his knowledge of Meat Dishes in Kyoto, and opened Western Cuisine Shima in 1991. He continues to provide soothing experiences today with his heartfelt service that is like a gentle companion to his guests.
