Born in Shizuoka Prefecture in 1975, he decided to become a chef after spending his childhood eating out with his father. After graduating from high school and training at long-established restaurants in Tsukiji and the former Kobikicho area, he joined the famous Sushi Aoki at the age of 28. He worked hard as part of the launch team at the Nishi-Azabu store, and served as head chef there for three years. After 22 years of training, he opened Sushi Suzuki in Ginza in 2015. If you want to enjoy blissful nigiri sushi made with careful Edomae techniques such as simmering and finishing, this is the place to go.
