We use "domestic shabu shabu" in all of our eel dishes, including our famous "eel shabu-shabu" as well as "unagi ju". Please enjoy the world of exquisite eel where you can taste the original flavor of eel.
Food “Maehara specialty” “Eel Shabu Kaiseki”
At our restaurant, you can enjoy ``eel shabu kaiseki,'' which is rare elsewhere. The reason why you can enjoy shabu shabu that brings out the full flavor of the ingredients itself is because the domestic eel has a delicate flavor without any harsh tastes. Dip fresh raw eel meat into soup stock and enjoy with ponzu sauce and yuzu pepper. Please enjoy the firm texture and the natural flavor of eel that gradually oozes out the more you chew.
ChefRyoshiro Nomura, the head chef who supports our restaurant with his rich experience and mature skills.
The head chef, Ryoshiro Nomura (born 1955 in Gifu Prefecture), supports the restaurant's authentic taste. After graduating from high school, he trained for many years at a famous Japanese restaurant in Kyoto, ``Okazaki Tsuruya,'' and then over ten years of training at an eel specialty restaurant in Kyoto, and has been working at our restaurant since 2007. In 2009, our restaurant was awarded a Michelin star, and our eel dishes and Japanese Cuisine prepared with expert skills have received high praise both domestically and internationally.
