ChefShunji Goto: Sharing the food culture he learned in Italy
Originally from Aichi Prefecture, he worked at a resort hotel and Restaurants in Nagano and at Al Porto in Nishi-Azabu, Tokyo before moving to Italy. He trained in various places, including Albergo del Sole in Milan, before returning to Japan. After working as the executive chef of Gran Viatto in Aichi, he went independent. He also worked as the owner-chef of restaurants such as Un Goccio in Nagoya and Ateo in Kita-Aoyama, Tokyo, but wanted to share timeless moments with his guests, so he opened La Bottega Gorosa in Yugawara in 2010.

Chef Goto was inspired by the simple and rustic cuisine of Tuscany and creates "Italian Local Cuisine." He carefully prepares the dishes using techniques he learned in Italy to bring out the best in local ingredients such as seafood, vegetables, and game. Enjoy these delicate and beautiful dishes, each one carefully prepared, with natural wines carefully selected by Chef Goto, who has a deep knowledge of Italian wines. "Bottarga Pasta," available all year round, is a popular dish made with plenty of homemade bottarga.
