Food What France smells like
Whether you eat it or look at it, you can smell France. While adhering to the basics and patterns of French cuisine, I want to put what I feel into each dish. France taught me a lot of things: cooking, spirit, way of life... soy sauce, etc. I always want to stick to classic French cuisine without using miso or Japanese seasonings.

This is the best fish from Kono Fresh Fish, Imabari City, Ehime Prefecture. The firmness of the meat is different, and it doesn't smell fishy in a good way, and it's fragrant when eaten raw or when grilled.
