ChefChef Nakaminato Takayuki: The second generation master of sushi and Japanese Cuisine
Born in Hokkaido in 1974. After graduating from high school, he trained in sushi and Japanese Cuisine for seven years in Sapporo and three years in Tokyo. Sushi In 1999, when Minato Sushi was destroyed by fire, he decided to take over the goodwill as the second generation and opened the current Sushi Minato. Rather than sticking to using only ingredients from Hokkaido, the restaurant uses a generous amount of fresh seafood selected from around the country. Depending on the ingredient, the fish may be aged, grilled, or smoked over straw. The plumply stewed conger eel has an even more grilled aroma and flavor, and when simmered in a rich sauce, it has a texture that melts in your mouth. Nakaminato's experience working in a Japanese Cuisine allows him to provide snacks that go well with sake, such as boiled Pacific octopus, homemade dried mullet roe, and abalone in liver sauce.

Passing through the elegant entrance, you will see the counter overflowing with the energy of the chefs. The dignified interior also features private rooms, allowing you to enjoy your meal surrounded by an atmosphere of moderate tension and hospitable hospitality. The counter seats, made from Katsura wood, are special seats where you can watch Nakaminato at work up close. Watching the craftsmen at work is said to be one of the ways to enjoy sushi.
